Made this up with whatever I had in the fridge and it was delicious.

Recipe Ingredients for Light Chicken Paillard

200 grams boneless chicken breasts (2 chicken breasts)
1 tsp olive oil
1 clove garlic
1 jalapeno pepper
1 tbs capers
2 tbs low-fat plain yogurt
1 cup fresh parsley
1 tbs chicken broth
4 tbs white wine
1 tbs saffron
1 tbs lemon zest
2 tbs navy beans
2 tbs fresh parmesan cheese

Recipe Directions for Light Chicken Paillard

  1. Warning: I am French so I don't have all the right vocabulary

  2. Thinly slice jalapeno pepper

  3. Crush garlic

  4. Pound chicken with a mallet and spread garlic over it.

  5. Spray olive oil on non-stick pan and sauté jalapeno pepper

  6. Add chicken breasts with garlic

  7. Cook for about two minutes on each side

  8. Add white wine, chicken broth, capers, navy beans, lemon zest and saffran

  9. Remove from heat and add chopped parsley, salt and yogurt

  10. Serve
