Recipe Ingredients for light chicken enchilada

2/3 cup chopped onion
1 tablespoons olive oil
3/4 cup chopped tomato
3 ounce chopped green chilies
2 cloves garlic
1/4 teaspoon salt
2 cups cooked chicken
6 corn tortilla
1/2 (28 g) avocado
1 oz Queso Fresco

Recipe Directions for light chicken enchilada

  1. combine onion and oil in a 1 1/2 quart glass bowl. macrowave uncover, at power level 10 for 5 minutes, stirring once. add tomato, chilies, garlic, and salt. cover. macrowave at power level 10 for 5 minutes, stirring once. drain if mixture seems water. add checken. cover and microwave at power level 10 for 3 or 4 minutes or until chicken is hot.

  2. wrap 6 tortillas in a damp towel and macrowave at power 10 for 1 minute or until softened. spead about 1/6 cup of the chicken and filling on each tortilla on top with a heaping teaspoon of purred abocado. toll tortilla around the filling. repeat warming, filling and rolling with remaining tortillas.

  3. arrange filled tortillas sean side down on a 13''x9''x2'' oblog baking disk.

  4. sprinkle tortillas with cheese. macrowave, uncovered at power level 10 for 5 minutes or until tortillas are heated through.

  5. serve with any remaining avocado.
