288 grams Mushrooms, Portabella
115 grams White Onion
115 grams Bell Pepper Green
14.5 oz Kroger Peeled Tomatoes Petite Diced
8 oz Tomato Sauce

Recipe Directions for Light Chicken Cacciatore

  1. Season chicken with salt and 1/2 tsp black pepper.

  2. Heat 1 TBS olive oil in large skillet on medium-high heat. Add chicken (as fillets or cubed); cook and stir 5 min or until lightly browned. Remove chicken from skillet.

  3. Add remaining olive oil, mushrooms (sliced), onions, and bell peppers; cook and stir 5 min on medium-high or until tender.

  4. Stir in remaining ingredients as well as 1 tsp minced garlic, 1 tsp majoram leaves, 1/2 tsp oregano leaves, 1/2 tsp crushed rosemary leaves, and 1/2 tsp thyme leaves. Bring to boil.

  5. Return chicken to skillet. Reduce heat to low; cover and simmer 5 min or until chicken is heated through.
