1 bag southern style hash browns 1 can healthy requests cream of chicken soup 1 C nonfat milk 1 C light sour cream 1 C cheddar veggie shreds 1 T minced onion Salt & Pepper to taste 3 T butter, melted (optional) 1 C corn flakes (optional) Optional ingredients not included in calorie count

Recipe Ingredients for Light Cheesy Funeral Potatoes

28 oz Potatoes
10.75 oz Healthy Request Cream of Chicken Soup
8 oz Sour Cream
8 oz Milk, Nonfat, Fluid
9 oz Veggie Shreds Cheddar Flavor
4 tsp Minced Onion

Recipe Directions for Light Cheesy Funeral Potatoes

  1. Thaw frozen potatoes and place potatoes in a 2-3 quart casserole dish or

  2. a 9x13 cake pan.

  3. Combine soup, milk, sour cream, cheese, and onion and salt and pepper to taste. If a saucier

  4. dish is desired add 2-3 Tbls additional milk. Mix well. Spread over potatoes.

  5. If desired, melt butter and combine with corn flake crumb. Sprinkle crumbs over casserole.

  6. Bake uncovered at 350 degrees F for 30-45 minutes or until hot and bubbly throughout.
