A delicious, decadent tasting dish

Recipe Ingredients for Light Cheese souffle

1 cup milk, non fat
2 T. flour
2 T. butter
1/2 t. dry mustard
5 T. grated parmesan cheese
2 T. shredded gruyere
3 egg yolks
4 egg whites
1/2 t. salt
1/4 t. cayenne pepper

Recipe Directions for Light Cheese souffle

  1. In a medium saucepan over low to medium low heat, melt the butter and whisk in flour stirring constantly until mixture cooks to a golden shade and smells toasty and delicious. Slowly add the milk and bring the mixture to a boil until it thickens. About 3-5 minutes. Remove from heat and add the mustard, salt, pepper and cheese, mix well.

  2. Meanwhile separate the eggs, saving the fourth yolk for another recipe. Beat the egg whites until stiff but not dry.Butter and coat with grated parmesan, a souffle dish. Bake for 25-35 minutes in a 350 degree oven
