A heart healthy banana muffin that's low fat and delicious!

Recipe Ingredients for Light Banana Muffins

1 egg
1 tablespoon golden flax meal
1/4 cup brown sugar
1/4 cup white sugar
2 ripe bananas, mashed
1/4 cup applesauce
1/2 cup fat free plain yogurt
2 tablespoons canola oil
1 teaspoon cinnamon
1 3/4 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup chopped walnuts

Recipe Directions for Light Banana Muffins

  1. Preheat oven to 325 degrees F (165 degrees C). Spray a muffin pan with non-stick cooking spray, then cover with paper muffin liners and spray again.

  2. Mix 1 tablespoon of golden flax meal with 3 tablespoons water. Allow mixture to sit for a few minutes before adding to batter as an egg replacement.

  3. In a large bowl, beat egg, flaxseed-water mixture, and sugar in a large bowl until light and fluffy, about 5 minutes. Beat in bananas, applesauce, yogurt, and oil.

  4. In a separate bowl, sift together flour, baking powder, baking soda, cinnamon, and salt. Stir flour mixture into banana mixture, mixing just until blended. Fold in walnuts. Spoon batter into prepared muffin cups, about 2/3 full.

  5. Bake in preheated pan until golden and a toothpick inserted into center of the loaf comes out clean, about 20-30 minutes. Allow muffins to cool for a few minutes in the pan. Set on wire rack to cool completely.
