Light Banana Muffins Recipe

Makes 18 servings



Moist, low fat banana bread muffins. You may add nuts to these, as well. I used about 1/2 cup of chopped walnuts, to 12 muffins.

Recipe Ingredients for Light Banana Muffins

2 eggs
4 bananas
1 c all purpose flour
1 c whole wheat flour
1/2 c brown sugar
1 tsp salt
1 tsp baking soda
1 tbl vanilla
2 tsp cinnamon
1/2 c unsweetened applesauce

Recipe Directions for Light Banana Muffins

  1. Combine beaten eggs, vanilla, sugar and mashed bananas.

  2. Add flours, sugar, salt, baking soda and cinnamon.

  3. Mix well; then add the applesauce and stir to combine.

  4. Pur into greased muffin cups, about 2/3 full.

  5. Bake at 350 for 24 minutes
