Recipe Ingredients for Light banana muffins

1 cups sugar (+1/4 cup Splenda)
1/4 cup unsweetened applesauce
1/8 cup margarine (1/4 cup light spread)
1/2 cup egg whites
3 bananas, mashed
3 oz skim milk (4 oz soymilk)
1 teaspoon vanilla
2 cups all-purpose flour
1/2 cup wheat flour
1 teaspoon baking soda
1 teaspoon salt

Recipe Directions for Light banana muffins

  1. Mix first 7 ingredients until well blended.

  2. Add flour, soda and salt until moistened.

  3. Add nuts if desired.

  4. Spoon into mini muffin tins.
