2 ripe bananas
2 eggs
2 tablespoons all-purpose flour
2 tablespoons brown sugar
1 teaspoon vanilla or vanilla bean paste
1 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon ground nutmeg
1/4 cup skim milk

Recipe Directions for Light Banana Bread Pudding

  1. Preheat the oven to 350 F. Spray 4 ramekins with non-stick baking spray.

  2. Combine all ingredients in a food processor and puree until smooth. Pour into the ramekins and bake for 30 minutes. Serve warm, with a small dollop of fresh whipped cream and a sprinkle of nutmeg.
