A Lighter version of the favorite alfredo sauce.

Recipe Ingredients for Light Alfredo Sauce

1/2 onion, chopped
1/2 clove garlic, minced
1 tsp vegetable oil
1 cup skim milk
1/2 cup chicken broth
1 1/2 tbsp all-purpose flour
1/4 tsp salt
1/8 tsp pepper
1/4 cup grated parmesan cheese
8 oz. whole wheat pasta
8 oz. broccoli

Recipe Directions for Light Alfredo Sauce

  1. In medium saucepan, heat oil over medium heat. Add onion and garlic, and saute until golded brown.

  2. In small saucepan, stir together milk, chicken broth, flour, salt and pepper over low heat until smooth and thick. Stir into onion mixture. Continue to cook over medium low heat, stirring frequently, until the sauce is thick. Stir in parmesan cheese.

  3. Meanwhile, cook pasta in boiling water. Add broccoli to the pasta for the last several minutes of cooking. Continue cooking until pasta is al dente.

  4. Drain pasta and broccoli, toss with sauce and serve.
