Recipe Ingredients for Light Alfredo

12 oz fettuccine
4 cup Steamfresh Broccoli Cuts
1 cup skim milk
1 tablespoon Light Butter with Canola Oil
1 tbs whole wheat flour
1/4 cup grated parmesan cheese
1/4 cup shredded fat free mozzarella cheese
154 4/5 g .5 bag Fresh Frozen Select Vegetables Classic Mixed Vegetables
3 oz Salmon, Atlantic, Wild
1 tbs olive oil
3 cloves Garlic

Recipe Directions for Light Alfredo

  1. Start fettuccine water boiling and cook according to box instructions.

  2. Cook the broccoli according to the box instructions and microwave 1/2 a bag of frozen carrots, peas, and corn.

  3. While everything is in the microwave, mince the garlic and set into a small skillet along with the olive oil and salmon and cook over med-low heat.

  4. Next, put the butter, milk, and flour into a small pot and put over medium heat and stir occasionally until the butter is melted.

  5. When the broccoli is done put it in a large bowl and set aside.

  6. Take the mixed vegetables and pour about half of them into the milk mixture and then add the 1/4 cup mozzarella.

  7. Take a moment and flip over the salmon and pour the rest of the mixed vegetables into the bowl of the broccoli.

  8. Return to the sauce and stir it until the mozzarella is fully melted into it then slowly pour in the parmesan cheese, mixing it until it's dissolved completely into the mixture.

  9. Take the sauce and salmon off the heat.

  10. Using a fork, shred the salmon and pour (along with minced garlic) over the vegetables in the main bowl and mix it.

  11. Drain the noodles, and mix with everything else in the bowl then pour the Alfredo sauce over the mix.

  12. Note: while pouring the sauce onto the noodles, I suggest pouring about 1/3 of the sauce then toss the noodles, and repeat so that everything receives an even coating.
