A soft, chewy, lighter version of everyone's favorite cinnamon cookie!

Recipe Ingredients for Light As Air Snickerdoodles

3/8 cup sugar
1/3 cup brown sugar, packed
1/4 cup country crock light
1 tsp vanilla
1 egg white
1/2 tsp baking soda
1 tsp cream of tartar
1 3/4 cup flour
1/4 tsp cinnamon
1/8 cup sugar
1 tsp cinnamon

Recipe Directions for Light As Air Snickerdoodles

  1. Cream 3/8 cup sugar, brown sugar, and butter until light and fluffy. Add vanilla and egg white, and beat until very smooth.

  2. Combine flour, soda, tartar, 1/4 tsp cinnamon (and a dash of salt if you use unsalted butter, but margarines have plenty on their own!).

  3. Stir dry ingredients into wet mixture until stiff batter forms. Drop batter by rounded teaspoons into 1/8 cup sugar/ 1 tsp cinnamon mixture. Roll with a fork to coat evenly, then place on greased cookie sheet. Place cookies about 2 inches apart, then flatten with a glass.

  4. Bake in a preheated 400 oven for 6 minutes. Remove from oven and cool on sheet for one minute, then remove to rack to cool completely.

  5. I did get 27 cookies (because I'm obsessive) but 2 dozen is a good estimate, and a nice size cookie!
