Recipe Ingredients for LIFE Apple Cinnamon Muffins

225 grams gala apple
1/4 cup skim milk
185 grams yogurt
2 large egg whites
1/2 teaspoon vanilla extract
1/4 cup brown sugar
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon ground nutmeg
1/8 teaspoon salt
1 cup whole wheat flour

Recipe Directions for LIFE Apple Cinnamon Muffins

  1. preheat oven to 350F.

  2. prepare the muffin pan with muffin liners and spray with nonstick spray.

  3. in a large bowl, mix applesauce, milk, yogurt, egg whites, and vanilla. add sugar, baking powder, baking soda, cinnamon, nutmeg, and salt. stir just to combine.

  4. sprinkle flour over batter, and fold delicately; do NOT OVER-MIX. fold in apples.

  5. spoon batter into muffin cups. bake about 20-25 minutes, until toothpick comes out clean.

  6. the muffins can be frozen in an air-tight container, sealed freezer bag, or individually wrapped for up to 2 months. for best results, freeze muffins immediately after baking and cooling to room temperature.
