Recipe Ingredients for Library - Hakka-Style Eggplant Stirfry

2 tablespoons oyster sauce
1/2 teaspoon sesame oil
1/2 teaspoon Sauce, Chili Garlic
1/4 cup vegetable broth
3 Japanese Eggplants, deep-fried
4 tbsp canola oil
1 Green Bell Pepper
1/2 medium white onion
6 cloves garlic
1/2 cup Thai Basil
1 jalapeno pepper
1/2 cup white rice

Recipe Directions for Library - Hakka-Style Eggplant Stirfry

  1. Combine the first 4 ingredients in a bowl to make sauce.

  2. Roll-cut the eggplant into ~1-inch cubes. Chop the onion and bell pepper into 1-inch pieces, and thinly slice the jalapeno. Peel the garlic cloves but leave them whole

  3. Deep-fry the eggplant pieces. Set aside and dry on paper towels.

  4. Stir-fry the onions, bell peppers and jalapenos for ~45 seconds. Add the eggplant pieces, garlic, basil leaves, and sauce. Stir-fry for about 5-6 minutes, or until eggplant is soft.

  5. Serve with white short-grain (sushi) rice and mint leaf garnish.
