There is one minor substitution in this recipe. 2% milk is used instead of the canned and only 3/4 cup instead of 1 1/2. This gives the pie a more custard-like texture.

Recipe Ingredients for Libby's Pumpkin Pie and Crust (recipe from can)

3/4 cup granulated sugar
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
2 large eggs
16 ounce can Pumpkin
3/4 cups 2% milk
1 cup all-purpose flour
1/2 teaspoon salt
1/3 cup vegetable shortening
2 tablespoons cold water*

Recipe Directions for Libby's Pumpkin Pie and Crust (recipe from can)

  1. Crust:

  2. COMBINE flour and salt in medium bowl; cut in vegetable shortening with pastry blender or two knives until mixture is crumbly. Sprinkle with water; blend until mixture holds together.

  3. SHAPE dough into ball; place on lightly floured surface. Roll out dough to 1/8-inch thickness. Line pie plate with pastry. Turn edge under; crimp as desired.

  4. NOTE: To make two crusts, double all ingredients, follow procedure above, and divide dough in half.

  5. *Add 1 additional tablespoon water as needed.

  6. Pie Filling:

  7. MIX sugar, cinnamon, salt, ginger and cloves in small bowl. Beat eggs in large bowl. Stir in pumpkin and sugar-spice mixture. Gradually stir in evaporated milk.

  8. POUR into pie shell.

  9. BAKE in preheated 425 F oven for 15 minutes. Reduce temperature to 350 F; bake for 40 to 50 minutes or until knife inserted near center comes out clean. Cool on wire rack for 2 hours. Serve immediately or refrigerate. Top with whipped cream before serving.
