Some cooking ideas: You can add more garlic and omit the marjoram, if you like. Liane never uses the marjoram; it fights with the garlic! Canned pure pumpkin or pumpkin puree works - go for the canned if you want to avoid the blender step (which Liane always does). You can also do your peanut butter to taste; sometimes you want more peanuts, sometimes more pumpkin. And the red pepper flakes are options, for a little extra kick. Makes 4 servings. NOTE: This recipe is 9 Weight Watchers POINTS(c) per serving.

Recipe Ingredients for Liane's Pumpkin Soup Recipe

2 tbsp. butter
1 1/4 cups onions, chopped
1/4 cup shallots, chopped
2 cloves garlic, minced
1/2 tsp marjoram, dried
1/4 tsp thyme
3 cups chicken broth
15 oz pumpkin, canned pure
1 1/2 cups low-fat milk
1/2 cup peanut butter, creamy
1 dash red pepper

Recipe Directions for Liane's Pumpkin Soup Recipe

  1. Melt butter in saucepan over medium high. Add onion, shallots and garlic and stir occasionally for five minutes.

  2. Add marjoram and thyme; cook one minute.

  3. Stir in broth and pumpkin; bring to a boil. Reduce heat to low, cover and cook 15-20 minutes. Stir occasionally.

  4. Remove from heat and stir in milk and peanut butter.

  5. Blend until smooth in food processor or blender.

  6. Return to pan and cook over medium for an additional 5 minutes.
