Liam put this together based on a description he read of how someone's mom made chili a generation ago.

Recipe Ingredients for Liam's Chili

7 1/2 oz Pinto Beans
7 1/2 oz Black Beans
7 1/2 oz Navy Beans
20 oz Ground Beef
20 oz Beef, Chuck, Blade Roast
1 cup, sliced Onions
6 oz Poblano Pepper
2 pepper Peppers, Jalapeno
15 1/2 oz Diced Tomatoes
1/2 tsp Sea Salt
3 tsp Chili Powder

Recipe Directions for Liam's Chili

  1. Fire roast the jalapeno and poblano peppers. Set them in a bowl to cool, then seed them and mince them (Wear gloves when you do this.)

  2. Trim the chuck roast ( about 1.3 pounds) and discard the gristle and bones, or set them aside for your meat stock pot. Use a good sharp knife to mince ( not grind) the chuck meat.

  3. In a heavy bottomed dutch oven or saute pan, lightly brown the ground beef and chuck then stir in the diced onion and stir. Cook until the onion is translucent.

  4. Stir in the seasonings and the diced peppers. Stir in 1/2 a can of each of the three kinds of beans, drained. Then add 1 can of diced tomatoes with their liquid.

  5. Stir all together, then set the heat to its lowest setting and simmer the chili for at least two hours. check it often and stir it. Add water or tomato juice if needed to keep it from getting too dry.
