A cool and refreshing light meal for summer. Substitute chicken breast, ground turkey or pork for the beef. Also makes a great appetizer. Nutritional info mistakenly includes the ramen seasoning packet. Sodium is actually 550mg per serving.

Recipe Ingredients for Lettuce Wraps

16 lettuce leaves
1 pound lean ground beef
2 tbsp fresh garlic, minced
85 grams ramen noodles
2 tablespoon low sodium soy sauce
1 tbsp fish sauce
1 teaspoon sesame oil
1 tablespoon rice wine vinegar
1 tbsp ginger
1 ground pepper to taste
1 cup chopped onion
2 spring onions, chopped
1/4 c chopped red bell pepper
1/4 c chopped carrots
2 cup shredded cabbage

Recipe Directions for Lettuce Wraps

  1. Cook the package of Ramen, drain and rinse with cold water. Do not use the seasoning packet.

  2. Cook beef adding garlic for last few minutes. Drain all fat.

  3. Add sauce ingredients to large mixing bowl and stir.

  4. Prep vegetable ingredients and add to bowl along with Ramen. Toss thoroughly and taste for seasoning. Adjust as desired.

  5. Add beef and toss until thoroughly distributed.

  6. Serve with lettuce leaves.
