Tasty soup made from Iceberg/romaine type lettuce.

Recipe Ingredients for Lettuce Soup

3 cup, shredded or chopped Lettuce, Iceberg
15 fl oz Milk
1 cup Chicken Stock
1 medium (2-1/4" to 3-1/4" dia.) Potatoes, Boiled
1 cup, chopped Onions
1 clove Garlic

Recipe Directions for Lettuce Soup

Fry chopped onion and minced garlic until transluscent. Add shredded lettuce and cubed potatoes and fry for a further 5 to ten minutes until lettuce wilted. Add milk and chicken stock, season to taste. Bring to boil and simmer until potato soft , approx 20 minutes. Blend to a smooth consistency and serve with a garnish of shredded lettuce
