A leaner version of a recipe I found in an Italian recipe magazine. Just experimenting.

Recipe Ingredients for Lettuce, pea and ham mold

300 g lettuce
50 g Emmental cheese
100 g light ricotta cheese
1 egg
140 g green peas
90 g cooked ham
6 g butter
30 g breadcrumbs
10 g garlic
3/10 g nutmeg
1/5 g black pepper

Recipe Directions for Lettuce, pea and ham mold

  1. Wash lettuce. Cut lettuce in slices. Cut Emmental cheese and the ham into little cubes. Rinse the peas.

  2. Heat some water with spices and salt and add the peas and the ham. Cook a little. Add nutmeg and pepper and other spices you like. You can add the lettuce at this point and cook it a bit or add it later into the mixture, raw.

  3. Also heat the oven to 200 degrees Celsius (about 392 degrees Fahrenheit) or as you normally do with flan, depends on the oven.

  4. Mix the ingredients (the ham and the peas and lettuce and more salt if needed and the egg and the Emmental cheese and the ricotta cheese). If its very liquid you can add some of the breadcrumbs.

  5. Grease the pan using butter and some breadcrumbs (about a third), or in any other way you prefer.

  6. Pour the mixture into the pan. Grate it with Parmesan cheese and the rest of the breadcrumbs.

  7. Cover with Parmesan cheese and the rest of the breadcrumbs.
