From my childhood cookbook, Let me in the Kitchen by Susan Mendelson. (1982). (Adapted instructions but identical ingredient list)

Recipe Ingredients for Let Me in the Kitchen TOMATO SOUP

3 tbs butter
1 clove garlic
1 onion (chopped)
1 carrot (chopped)
3 tbs flour
3 cups canned or fresh tomatoes
1 tbs sugar
1 tsp salt
1 tsp pepper (hmmmmm...or less)
1 tsp basil
1 tsp oregano
3 cups milk
1 tbs butter

Recipe Directions for Let Me in the Kitchen TOMATO SOUP

  1. Add seasonings to tomatoes and mix.

  2. Melt 3 tbs butter and cook onion, garlic, and carrot.

  3. Add flour and stir quickly. Cook for approx 30 seconds.

  4. Add tomatoes and cook stirring for 15 minutes.

  5. Using an immersion blender, blend tomatoes.

  6. Add milk and remaining 1 tbs butter and reheat gently.
