From a cookbook called Let Me in the Kitchen (intended for kids) by Susan Mendelson. They came out really moist and light and lovely. :-)

Recipe Ingredients for Let Me in the Kitchen Bran Muffins

1 egg
1/3 cup oil
1/3 cup white sugar
1/3 cup brown sugar
1 cup mashed banana (and/or buttermilk)
1 tsp vanilla
1 cup flour
1 tsp baking powder
1 tsp baking soda
1 cup bran
1/3 cup raisins

Recipe Directions for Let Me in the Kitchen Bran Muffins

  1. Preheat oven to 425 (i did 400)

  2. Beat egg.

  3. Add sugars and mix well.

  4. Add oil and mix well.

  5. Mash banana (if using) on a plate and add to a 1 cup measuring cup. Top up with milk or buttermilk as needed to equal 1 cup. Add to sugar mixture.

  6. Add vanilla.

  7. In a separate bowl combine dry ingredients. (except raisins).

  8. Gently blend wet and dry, adding raisins when almost blended.

  9. Oil a muffin pan and divide batter (just over 1/4 cup each).

  10. Bake 12-15 minutes.

  11. (Next time i'll try making these with spelt flour, and maybe adding extra bran, carrot, or other goodies)
