Turkey Breast, Leek, Philly stir fried with peppers and tomato

Recipe Ingredients for Lesley's Turkey and Leek stir fry

0.5 medium raw Leeks
0.3 tbsp Oil Olive Extra Virgin
0.5 pepper, large (3-3/4" long, 3" dia) Peppers, Sweet, Yellow
25 grams Cream Cheese Light
30 grams Whole New Potatoes
120 grams Turkey, All Classes, Meat Only

Recipe Directions for Lesley's Turkey and Leek stir fry

  1. Stir fry finely chopped leek and pepper and thinly sliced new potato in oil until leek soft, pepper and potato slightly charred.

  2. Remove from pan and set aside.

  3. Add diced turkey, seal and fry for a few minutes.

  4. Return vegetables to pan, add chopped tomato and cook for 5 minutes until turkey is cooked.

  5. Add tablespoon of light garlic and herb philadelphia, mix until melted.

  6. Season to taste.

  7. Serve.
