Recipe Ingredients for Lentils with tomatoes and spinach

2 cups cooked lentils
14 oz diced tomatoes
10 oz frozen spinach
1 tsp garlic powder
2 tsp ground ginger
2 tsp curry powder
1 tsp red pepper jelly

Recipe Directions for Lentils with tomatoes and spinach

  1. simmer 2 cups dry lentils in 6 cups water 15-20 minutes.

  2. add tomatoes, spinach, jelly, and spices.

  3. simmer another 20 minutes, or until flavors permeate dish.

  4. makes 5 - 1.25 cup servings.
