Recipe Ingredients for Lentils with tomatoes

1 cup dry lentils
2 tablespoons olive oil
1 green bell pepper, chopped
1 onion, chopped
28 oz can diced tomatoes
1 salt and pepper to taste

Recipe Directions for Lentils with tomatoes

  1. Cook dry lentils in boiling salted water for about 20 minutes, or until tender.

  2. Meanwhile, saute onion and bell pepper in olive oil until vegetables begin to wilt.

  3. Add tomatoes and bring to a simmer.

  4. Add cooked lentils,salt, and pepper.

  5. Simmer for 30 minutes to blend flavors.

  6. Serve over rice, couscous, or with pita bread.
