Recipe Ingredients for Lentils and Tomatoes

2 cups chicken broth
1 cup dry lentils
3 tablespoons olive oil
1 medium red bell pepper, chopped
15 oz tomatoes, chopped
1 leek, chopped

Recipe Directions for Lentils and Tomatoes

  1. Prepare lentils according to package directions; drain and set aside.

  2. In a large saucepan, heat oil and add leek and bell pepper. Saute until vegetables are tender-crisp. Add tomatoes, lentils, chicken broth, and 1 cup water and bring to a boil. Simmer, covered, 20 to 25 minutes until lentils are soft. Salt and Pepper to taste.
