Recipe Ingredients for Lentils and Tomatoes - AllRecipes

2 cups chicken broth
1 cup water
1 cup dry lentils
3 tablespoons olive oil
1 medium red bell pepper, chopped
15 oz tomatoes, chopped
1 leek, chopped

Recipe Directions for Lentils and Tomatoes - AllRecipes

  1. In a pot, bring the water and broth to a boil, and stir in the lentils. Reduce heat, and simmer 20 minutes; drain.

  2. Heat the olive oil in a large skillet over medium heat, and saute the bell pepper and leek until tender. Mix in the tomatoes, and season with salt and pepper. Stir in the lentils, reduce heat, and simmer 25 to 30 minutes, until the lentils are tender. Serve over rice.
