Savory Lentils with onions, peppers and garlic

Recipe Ingredients for Lentils with soffrito

3/4 large onion
1/2 Green pepper
1/2 Red pepper
1 clove garlic
1 tomato, diced
2 tbsp extra virgin olive oil
3 1/2 cups red lentils
1 dash of Salt

Recipe Directions for Lentils with soffrito

  1. Mince onion, peppers and garlic in a food processor until minced

  2. Heat oil in a pot

  3. Add the minced ingredients and the diced tomatoes to the heated oil in the pot

  4. After several minutes, add lentils

  5. After several minutes, add water until it covers the lentils (about 6 cups)

  6. Season with salt, cummin, white pepper and other seasonings as desired.

  7. Simmer lightly for about an hour. Stir periodically. Add more water and seasonings or salt as needed.
