light and delicious lentil salad, great for appetizers or just a light dinner

Recipe Ingredients for lentils salad

4 oz lentils
4 oz celery, cut brunoise
4 oz carrots, cut brunoise
1 1/2 oz red onion, cut brunoise
1 oz parsley, chopped
4 tsp extra virgin olive oil
2 tsp lemon juice

Recipe Directions for lentils salad

  1. pick over, rinse and drain the lentils

  2. place them in a sauce pan with enough water to cover. bring to a boil, reduce heat, and simmer until the lentils are just tender and not falling apart.

  3. drain the lentils and place them in a bowl.

  4. while the lentils are still warm, add the celery, carrot, onion, olive oil, and lemon juice. toss to mix.

  5. serve the lentil salad cold or warm.
