French lentils with squash, carrots, and onions

Recipe Ingredients for Lentils with Roasted Vegetables

220 g carrots
211 g red onion
487 g acorn squash
1 T olive oil
200 g French lentils
48 g shallots
4 t apple cider vinegar
1 t dijon mustard
45 g celery

Recipe Directions for Lentils with Roasted Vegetables

  1. Cut onions and sqaush in wedges. cut carrots lengthwise. toss with 1 t olive oil and roast @ 425 for about 30 min.

  2. Cook lentils with shallot for about 20 min. Drain and add salt and pepper to taste.

  3. Mix mustard, vinegar and remaining olive oil. Pour over lentils and celery.

  4. Serve with roasted veggies.
