Recipe Ingredients for Lentils and Rice Tacos

3/4 cup dry lentils
3/4 cup brown rice
4 cups tap water
2 teaspoons chili powder
1/2 teaspoon cumin
1 teaspoon onion powder
1/4 teaspoon garlic powder
1 tablespoon olive oil
1/2 onion, chopped
1 green bell pepper, chopped
1 red bell pepper, chopped
16 oz of corn
1 pepper to taste
16 oz refried beans
8 taco shells

Recipe Directions for Lentils and Rice Tacos

  1. In a 2-quart saucepan bring the water to a boil. As the water is heating, add the lentils, rice, bouillon, chili powder, cumin, onion powder, and garlic powder. Bring the whole thing to a nice fat boil. Reduce the heat to low. Place a lid on the lentils and allow the mixture to simmer for about 45 to 50 minutes or until the water is mostly absorbed.

  2. When the lentils/rice mix has about 15 minutes left to go, heat oil over medium heat. Saute the onion in the heated oil with Adobo seasoning for about 5 minutes. Add peppers, corn and pepper to the mix and saute for about 5-7 more minutes.

  3. Heat the refried beans in the microwave until warmed. Heat taco shells according to package instructions as well.

  4. You can combine ingredients into the tacos as desired. Here?s what I did: With a spoon, spread refried beans over soft taco shell. Place hard taco in the center and wrap the soft taco around the hard shell. (Be careful not to break it!) Layer lentil/rice mixture, vegetable mixture. Enjoy!
