Recipe Ingredients for Lentils and Rice

1/2 cup brown rice
1/2 cup lentils
2 cups vegetable broth
1 cup carrots
1 onion
1 clove garlic
2 cups spinach
1 T olive oil

Recipe Directions for Lentils and Rice

  1. saute onion and garlic in oil

  2. add broth and bring to boil

  3. add lentils and rice and return to boiling

  4. add veggies

  5. simmer 45 minutes or until lentils and rice are cooked through

  6. season with salt, pepper, italian seasonings to taste
