This makes a great one pot meal, and the leftovers just get better every day. I cook it up on Sundays and eat it for lunch all week - and it's a great way to get tons of fiber in your diet!

Recipe Ingredients for Lentils and Rice

1 tsp olive oil
2 yellow onions, diced
4 carrots, diced
6 cloves garlic, minced
2 tbsp cumin seeds
2 tbsp coriander seeds
1 tbsp ground ginger
1 tsp paprika
1 tbsp peppercorns
1 tsp nutmeg
1/2 tsp red pepper flakes
1 cup lentils
28 oz diced tomatoes, undrained
4 cups water
1 cup uncooked rice

Recipe Directions for Lentils and Rice

  1. Heat olive oil in a large pot. Add onions and carrots and saute over medium heat for 5 minutes, or until onions are translucent and just starting to darken.

  2. Add garlic and cook for another 2 minutes.

  3. Combine cumin seeds, coriander seeds, ground ginger, paprika, peppercorns and nutmeg in a spice grinder and process until it is a powder.

  4. Add spice mixture to the vegetables and stir to coat everything. Cook for 2 minutes.

  5. Add tomatoes, water and lentils to the pot. Cook for 20 minutes.

  6. Add rice and cook for another 20-30 minutes, or until most of the liquid has been absorbed. You may need to add another cup of water when you add the rice.
