Simple lentils & rice with vegetables. Add seasoning to taste. If served as a side dish, this would easily serve two.

Recipe Ingredients for Lentils & Rice

1 1/2 c water
1/4 c dried lentils
1/4 c brown rice
1 t minced garlic
3 oz chopped onion
3 oz chopped carrots
3 oz green peas

Recipe Directions for Lentils & Rice

  1. In small saucepan, bring water to boil.

  2. Add lentils and rice and reduce to simmer.

  3. After 10 minutes, add onion & garlic and carrots if raw.

  4. Continue cooking until lentils & rice are soft. Stir in peas.
