Recipe Ingredients for Lentils and Rice (mujadarrah)

4 onions
3 tablespoons olive oil
1 cup lentils
3 1/2 cups water
1 cup long-grain rice
2 teaspoons salt

Recipe Directions for Lentils and Rice (mujadarrah)

Dice 3 of the onions. Fry in 2 tablespoons of the olive oil. Saute until brown, set aside. In four-quart covered pot, boil lentils in the water. Boil, covered, then simmer for 15 minutes. Add the cooked onion, rice and salt. Cover and simmer for 20 minutes more, until the rice and lentils are soft. Let sit for five more minutes to absorb any remaining water. Slice remaining onion into rings. Brown in remaining oil. Top dish with the onion rings, and some plain yogurt.
