Lebanese Mjaddarah - delicious served with pickled turnips and salad. Can be served cold.

Recipe Ingredients for Lentils with Rice (Mjaddarah)

1 cup lentils
3 1/2 cups water
3/4 cup rice
4 onions
1/2 cup oil

Recipe Directions for Lentils with Rice (Mjaddarah)

  1. Place lentils and water in large saucepan. Bring to a boil, reduce heat and cook for 20 minutes until almost tender.

  2. Meanwhile, saute onions in 1/4 cup oil until browned.

  3. Add rice, salt, 2-3 Tbsp. onions and oil mixture to lentils; stir and cover.

  4. Bring to a boil, reduce heat and cook for an additional 20 minutes over low heat, until rice is tender.

  5. When lentil mixture is cooked, pour onto serving platter and smother top with remaining fried onions.

  6. Variation - 3/4 cup coarse cracked wheat (burghul) may be substituted for rice.
