Fried onions mixed with lentils and brown rice and topped with yogurt.

Recipe Ingredients for Lentils & Rice with Fried Onions

6 tbs olive oil
1 large white onion
1 1/3 cups lentils
3/4 cup uncooked brown rice
1/2 cup plain yogurt
1 salt and pepper to taste

Recipe Directions for Lentils & Rice with Fried Onions

  1. Heat the olive oil in a skillet for about 10 minutes until browned.

  2. Put lentils in pot, cover with water and bring to boil, reduce heat and simmer for about 15 minutes.

  3. Add rice and enough water to cover with the lentilsl. Season with salt and pepper and continue to simmer 15 to 20 minutes until tender.

  4. Mix half the onions with the lentil mixture.

  5. Served topped with yogurt and remaining onions.
