Lentils and Rice with Fried Onions. Yogurt as a topping is optional. Try adding diff. spices(garlic, 1 tsp of minced ginger and 1 tbsp of curry powder).

Recipe Ingredients for Lentils and Rice with Fried Onions

3 tbsp olive oil
3 large onions
4 Garlic cloves
1 1/3 cups uncooked green lentils
3/4 cup uncooked brown rice
2 tsp cumin
1 chicken bouillon cube

Recipe Directions for Lentils and Rice with Fried Onions

  1. Heat olive oil over medium heat. Stir in onions with 1 tsp of cumin and just a pinch of cimmamon until browned (anywhere from 10 to 20 min). Remove from heat, set aside.

  2. Cook Lentils according to package directions. Add 1 tsp of cumin and 1 chicken bouillon cube.

  3. Cook rice according to directions. Add spices to rice if you like. I add 3 - 4 cloves of chopped garlic.

  4. Mix rice with lentils and onions. Reserve some onions as a garnish. Top with yogurt or sour cream.
