Firied onionions mixed with rice and lentils, topped with plain Greek Yogurt

Recipe Ingredients for Lentils and Rice with Fried Onions (Mujadarrah)

15 g Extra Virgin Olive Oil
1 large onion
1 3/10 cup Green Lentils
3/4 cup Brown Rice
226 4/5 g Greek Yogurt
1 tsp Cumin
1 tsp red pepper

Recipe Directions for Lentils and Rice with Fried Onions (Mujadarrah)

  1. Heat olive oil in a large skillet over medium heat. Stir in the onions (sliced in rings), cand cook about 10 min until browned. Remove from heat, and set aside.

  2. Cook Green Lentils (7 min @ 15lbs in pressure cooker)

  3. Cook Brown Rice (20 min @ 15lbs in pressure cooker)

  4. Combine Rice, Green Lentils and 1/2 onions in sauce pan. Add small amount of water so they don't burn. Add cumin and red pepper (plus any other spices) simmer 5- 10 minutes to combine flavors.

  5. To serve top each serving with remaining onions and 2 oz of yogurt.
