A basic lentil preparation to accompany Indian dishes.

Recipe Ingredients for Lentils

2 tablespoons vegetable oil
1/4 teaspoon cumin
2 cloves garlic, chopped
1/2 onion, chopped
1/2 cup lentils
1 1/2 cups water
1/4 teaspoon salt
1/4 teaspoon cayenne pepper

Recipe Directions for Lentils

  1. Heat oil in a pot. Add cumin seeds, then, after fifteen seconds or so, add garlic and cook until browning begins. Then do the same with the onion.

  2. Add lentils and water. Reduce heat to low and simmer until lentils are tender (45 minutes to 1 hour).

  3. Add salt and cayenne to taste. Stir, then let simmer for another five minutes.
