Recipe Ingredients for Lentils and Quinoa

2 cup Lentils, Mature Seeds
1 cup Quinoa
4 medium Carrots
3 cloves, raw Garlic
1 tbsp Olive Oil
3 small Onions
1 1/2 tsp Cumin
1/2 tsp Cinnamon, Ground
1/2 tsp Salt, Table
2 cup Vegetable Stock
1 Apple Apples

Recipe Directions for Lentils and Quinoa

  1. Heat oil in a skillet or pan over medium heat.

  2. Cook onions, garlic, cumin, curry paste, cinnamon and salt stirring often for about 5 minutes our until softenend.

  3. Stir in carrots and quinoa.

  4. Cook, stirring occasionally for about 1 minute.

  5. Pour in stock and bring to a boil.

  6. Reduce heat, cover, and simmer for about 20 minutes until quinoa is tender and most of the liquid is aborbed.

  7. Stir in lentils, apple and green onions.

  8. Cook for about 5 minutes or until lentils are heated through.

  9. Serve with a dollop of yogurt.

  10. I like a LARGE dollop of yoghurt, it adds a bit of a tang.
