Lentil Salad, 1/2 cup serving size

Recipe Ingredients for Lentils & Pepper in Balsamic Sauce

8 oz Lentils
1 cup, chopped Onions
4.5 oz Feta Cheese
4 serving Balsamic Vinegar
2 tbsp Lemon Juice, Canned Or Bottled
1.5 serving Garlic Cloves
7 grams Ground Mustard Spice
140 grams Bell Pepper Green

Recipe Directions for Lentils & Pepper in Balsamic Sauce

  1. Cook lentils until just tender.

  2. Mince pepper & onion and place in a bowl.

  3. Prepare vinegrette with lemon jiuice, balsamic vinegar, dry mustard, & pressed garlic.

  4. Drain lentils, add them to the diced vegetables, & stir in half of the vinegrette. Allow to cool for about 5 minutes and then add the rest of the vinegrette and the feta cheese.
