Brown lentils cooked Indian-style, can be eaten with rice or flatbread, or on its own as a low-carb main course

Recipe Ingredients for Lentils Indian-Style

1 cup lentils
2 medium tomatoes, diced
1 tbsp garlic, diced
1 large onion, diced
2 tsp tomato puree
5 cups water
2 tbsp olive oil
1 tsp salt
1/2 tsp chili powder
1/4 tsp turmeric

Recipe Directions for Lentils Indian-Style

  1. Wash the lentils, place in pot with water, tomato puree, and 3/4 tsp salt. Boil until cooked, depending on the lentils, this will take 20-30 minutes.

  2. In a separate pot, heat olive oil. Add onions, chili powder, and turmeric. After a couple minutes, add the garlic.

  3. Once slightly browned, add the tomatoes and remaining salt. Turn off heat.

  4. Once the lentils are cooked, add them to the onion-tomato mixture, bring to boil once, and enjoy! Can be served with fresh coriander leaves and a serving of plain yoghurt to balance the spiciness.
