Tasty lentils with tender greens. Add some seasonings to taste.

Recipe Ingredients for Lentils and Greens

2 cups lentils
8 cups water
1 salt
1 pepper
4 cups collards
1/2 onion
1 tbsp olive oil

Recipe Directions for Lentils and Greens

  1. Saute onion in olive oil until brown. Add small amounts of water if the onion starts sticking.

  2. Add remaining ingredients and bring to a boil.

  3. Cook for about 45 minutes or until the lentils are tender. Use stock instead of water if available. Watch the sodium.
