Lentils with spinach, asparagus, green beans, and sugar snap peas

Recipe Ingredients for Lentils and Green Vegetables

1 cup uncooked Lentils
2 cups spinach
1 1/2 cups asparagus
1 1/2 cups green beans
1 cup sugar snap peas
1/2 red onion
1 dash cumin
1 dash coriander
1 dash celery seed
1 tbsp turmeric
3 tbsp olive oil

Recipe Directions for Lentils and Green Vegetables

  1. Start cooking the lentils for about 45 minutes while cutting the vegetables into short pieces

  2. Dice the red onion and cook in 2 tbsp of olive oil with spices until soft

  3. Add asparagus, green beans, and sugar snap peas

  4. Cover and let cook over medium heat for 5-10 minutes

  5. Add the spinach and cover for another 5-10 minutes

  6. Add the lentils and more turmeric, if desired, cook for 5 more minutes
