This recipe is perfect for cold winter nights it´s very satisfying, has lots of fiber and protein.

Recipe Ingredients for Lentils (green)

1 cup lentils, uncooked
4 cups water or chicken or beef stock
2 tomatoes, cut in halves
1 carrot, cut in halves
1/4 onion
4 cloves garlic
1 tsp salt
1 tsp pepper
1 tbsp cumin
1 tbsp thyme

Recipe Directions for Lentils (green)

  1. Give lentils a quick rinse under the faucet, place in pot where you´re going to cook them, put the 4 cups water and let them soak for about an hour.

  2. Turn the heat to high, place the veggies and remaining ingredients, bring to a boil and reduce heat just to a simmer, let it cook for 15 to 20 min.

  3. Place tomatoes, carrot, onion and garlic in blender with some of the stock and puree until smooth, return to pot and mix in. This will give the stock a thicker consistency sort of a creamier texture without added fats.

  4. Enjoy!
