Recipe Ingredients for Lentils and Green Chili

1 cup Yellow or "Golden" Lentils
1 pepper Anaheim Chile
1 serving Chicken Broth
1 cup (8 fl oz) Water

Recipe Directions for Lentils and Green Chili

  1. Combine all ingredient in a pot on the stove and cook until lentils are tender. (about 20 - 30mins)

  2. The anaheim chile should be roasted, deseeded and peeled. Or just open a can of green chillies. Golden lentils have the best flavor but any variety will work with this recipe.

  3. Add cumin or cayanne pepper if desired.

  4. If you are less concerned about sodium intake, add two cups of broth and omit the water.
