Quick, tasty lentils with veggies - hint of Indian food - hint of Mexican. Hearty and filling. Will make 2 or 3 days of food.

Recipe Ingredients for Lentils with Cumin and Ancho Chili pepper

2 large onions, diced
3 stalks celery, diced
2 medium carrots, cubed
2 sweet green peppers, diced
2 cups lentils, dry
5 cups chicken stock
1 salt and pepper to taste

Recipe Directions for Lentils with Cumin and Ancho Chili pepper

  1. Saute vegetables

  2. Deglaze with chix stock

  3. Add seasonings - cumin, ancho chili powder, garlic/onion powders

  4. Add lentils, cover and simmer until lentils are tender.

  5. Add water as necessary to hydrate lentils.
