Lentils baked with brown rice and apricots

Recipe Ingredients for Lentils and Brown Rice

1 c brown rice
1 c green lentils
1/2 c dried apricots
1 1/2 c curry powder
4 c water
1 tbsp olive oil

Recipe Directions for Lentils and Brown Rice

  1. saute brown rice and curry powder in olive oil for about one to two minutes.

  2. Add lentils and water

  3. Bake in the oven at 375 F for 25 minutes.

  4. Add dried apricots cut into quarters

  5. Bake for an additional 10 minutes.
