Recipe Ingredients for Lentils with beetroot and feta

300 g lentils
100 g beetroot
100 g feta cheese
1/2 onion
3 stalks of celery
1 tablespoon of olive oil

Recipe Directions for Lentils with beetroot and feta

  1. Saute chopped onion with chopped celery

  2. Drain can of puy lentils and add once onion and celery is soft

  3. cook off the mixture until most of the water has evapourated

  4. add chopped beetroot and feta to mixture just before turning off

  5. serve hot (or cold with some plain yoghurt )
